Most couples are looking for flavors that appeal to a wide audience. That is exactly why my “best vanilla cake” is just that, my best, most requested wedding cake flavor. I like to think of it as “the little black dress” of wedding cakes. You can fancy it up with a filling or two, say raspberry and white chocolate mousse or keep it simple with Swiss meringue buttercream filling plated on a strawberry or raspberry coulis. Most people prefer simple done extremely well.
Still, your menu isn’t just vanilla. There are so many delicious combinations that your head could spin. I recommend no more than 4-6 cake flavors and 6-8 fillings. I find more than that leads to confusion and indecision. Of course, clients will have special or seasonal requests, and I am happy to accommodate them but most clients want your guidance.
Your core recipes are your tasing menu.
Your core flavors should be your recipe foundation. These are the most popular flavors. For me it is Best Vanilla Cake, Best Chocolate Cake, Pink Champagne Cake, and Southern Pound Cake. I have these flavors at the ready in my freezer at all times.
