I am so in the beginning stages, it's a relief to hear from someone who is far more experienced. I had never really made cake before this year, but started practicing when my daughter asked me to make her wedding cake. Making it, tiering it, setting it up at the venue, I found out I was good at this. The point I'm at now is trying to choose a focus--I've gotten popular as a gourmet cookie maker in my community, but I'm drawn toward practicing cakes. I was just asked last night to do a themed birthday cake this January...and I have 4 months to practice. Confidence killer: I've never done sugar flowers (just signed up for a short course), never worked with gum paste, never touched fondant...very beginning stages here. Current level of expertise: I know the differences between ABC, Swiss Meringue, and Russian buttercream and have made all three successfully. I know I'm rambling--Just very happy to be following you and learning from your experience. Thank you again!
